Apex Keto's Bomber Brownies, are well... The "Bomb" when it comes to curing your brownie craving while sticking to your Keto Lifestyle. These were designed by to not only taste great, but to have an awesome profile to boot. These are made with all real ingredients. That means NO FAKE SWEETENERS!

Brownie Ingredients:

  • 200g – Almond Flour
  • 200g – Milk Boy Switzerland 85% Dark Chocolate
  • 100g – Coconut Oil
  • 57g – Salted Butter (Half a Stick)
  • 56g – Philadelphia Cream Cheese (1/4 Package)

Frosting Ingredients:

  •  224g – Philadelphia Cream Cheese (1 Package)
  • 18g – Raw Sugar (4 packets)
  • 13g – Vanilla Extract (1 Tbsp)
  • 8g – Heavy Whipping Cream (1/2 Tbsp)

Prep:

  • Set out Cream Cheese and Butter to soften.
  • Just barely melt the Chocolate and Butter, mix together. This can be done over low heat in a sauce pan, or in the microwave.
  • Lightly grease a flexible silicone pan with butter.

Assembly:

  • In a stand mixer beat together the Coconut Oil and Cream Cheese until smooth.
  • Gradually mix in the Dark Chocolate and Butter Mixture to combine.
  • Finally mix in the Almond Flour.
  • Pour mixture into flexible silicone pan and spread to level.
  • Place loosely covered in the fridge to chill for two hours.

Frosting:

  • In a stand mixer combine the Raw Sugar, Vanilla, and Heavy Cream until thoroughly mixed and the sugar is dissolved.
  • Mix in the Cream Cheese in batches until fully integrated. Whip for 1 minute.
  • Remove your Bomber Brownie from the fridge and frost evenly.
  • Return to fridge for at least 1 hour to set frosting, overnight is even better as everything will firm up nicely.

Storage:

  • Once this has chilled in the fridge, you can take a butter knife backwards around the walls of the silicone pan to release the edges.
  • Then push up from the bottom and gently remove from pan.
  • Cut into 16 pieces.
  • You can store your brownies in an air tight container in the fridge for up to 2 weeks…. If they last that long!

Recipe Notes:

  • While we have found the Milk Boy Dark Chocolate from Switzerland the best (sweetest) tasting 85% dark chocolate, you can substitute any 85% Dark Chocolate you like. Check out several, some will have less carbs than others even all being 85% Dark.
  • You can substitute regular sugar for the Raw Sugar if you would like in the same weight.
